How to roast squash

Roasting squash is one of those things that is scary at first but so simple once you know how, this method should work on most types of winter squash.
I used buttercup squash which tastes similar to acorn squash when roasted.  This is a basic way to prepare squash there are many other ways to incorporate delicious winter squash into dinner.
So here it goes first preheat oven to 350 F
Cut squash in half and scoop out seeds, then place cut side down in shallow pan.  Add a little bit of water and cover pan, I used tinfoil but if the pan has a lid use that.  Bake for approx   1 hour depending on the size of your squash you may need slightly more or less time.  Your squash should be soft when done.  I scooped mine out and mashed it with butter and salt this time but I also like to add it to creamy soups or pasta sauces.
